What mom isn’t a fan of a quick and healthy meal that the whole family will enjoy? I know I am! Running after a toddler and trying to keep the house at least one step above train wreck all day is a daunting feat. Then, add cooking a satisfying meal that tastes great to the equation and you’ve got a worn out mommy. I’ve got the perfect go-to meal that is delicious, nutritious, and that won’t have you slaving away in the kitchen just for you!
The main dish is a little something I found on one of my favorite websites called SkinnyMom.com. It’s called Skinny Salsa Chicken. It was part of The Supper Club menu option that they offer, which gives you a detailed menu plan for every night of the week for an entire month! The Skinny Salsa Chicken recipe only takes 5 minutes to put together and then has a 30 minute total cook time. How easy is THAT?
My new favorite side dish to complete this meal is Fiesta Lime Rice, While the chicken is doing its thing in the oven, you can throw this recipe together before the timer dings. This colorful side perfectly compliments the chicken and just brings the whole meal together for a Mexican style feast for four.
This meal is packed with protein, low on sugar, and is around 500 calories per serving. If you follow the WW+ plan, a serving of the chicken and a serving of the rice is a total of 10 points. Whatever plan you follow, though, I don’t think you can go wrong with this meal! For those of you that try one or both of these recipes, I hope you enjoy them as much as we do!
